Cooking Kashmiri cuisine like any other is an art, and more than that a tradition where the whole family sits down to a dinner of lavish Wazwani preparations served in a tarami (an exquisitely carved plate with intricate motifs of the chinar leaves). With the stage set for a lavish Kashmiri culinary affair, I first asked for a cup of steaming Kahwa tea to recover from the icy December breeze. The Kahwa was just the way I'd thought, not too cloudy with a hint of saffron and crushed almonds drowned at the bottom of the cup. I downed my potion in two deep swigs having already worked up an appetite for the elaborate courses that lay ahead.(Pics:Anwesha Mittra)

For the evening, we were sharing a 'tarami platter' like the good old Kashmiri folks that would have an assortment of starters like kebabs and lamb spare ribs served on a bed of rice with a sauce base, followed by a four-dish main course again with fresh steamed rice. Traditionally, as many as 35 dishes are served up in a tarami with an unlimited supply of fresh rice. (Pics:Anwesha Mittra)
